South Woods BLT Soup Recipe

One of the favorite soups served at South Woods is the BLT Soup, and since the recipe is requested so often, we decided to include it for you here.... As prepared at South Woods by head chef: Laurie Lepedus.

1 1/2 Cups ( 12 ounces ) finely diced bacon  In an 8 qt pot, lightly sauté bacon, but do not remove drippings.

Add margarine and heat until melted. Add lettuce and sauté about 3 minutes. 

Add flour, stirring mixture until well blended. Cook about 2 minutes

Add stock, tomatoes, nutmeg, and white pepper. Bring to a boil stirring to prevent sticking. When heated through, add half and half and warm, but do not boil.

Makes 12 servings

1 Tbls Margarine
1/2 Each Medium head lettuce, Chopped
3/4 Cup ( 6 oz ) Flour
10 Cups Chicken Stock
2 Each Medium tomatoes, Diced
1/2 Tsp Ground nutmeg
1/2 Tsp White pepper
2 Cups Half and half cream

Randall H., Cudahy, requested the recipe for a peppercorn dressing served at South Woods Restaurant, 5404 S. Pennsylvania Ave., Cudahy.

Larry Burss, proprietor, sent the recipe. He said this is the house dressing and their most popular dressing. "We make probably five gallons at a time, and we make it every week. I personally like it mixed with a buttermilk dressing," he said.

South Woods Restaurant Peppercorn Dressing

1 tablespoon black peppercorns
2 cups mayonnaise
1/3 cup sour cream
˝ teaspoon white pepper
2 teaspoons white vinegar
2 teaspoons apple sauce
1 teaspoon sugar

Crush peppercorns using a coffee grinder or a rolling pin on a hard surface. Set aside.

In bowl, mix all remaining ingredients, then whip in reserved peppercorns. Mixture will be thick. Chill overnight. Makes about 2˝ cups or enough for 16 side-salad servings.
